The Amarone Classico “Costasera” by Masi is unequivocally recognized as a benchmark for this type of wine, even among the great Italian reds. The winery has a historical presence in the heart of Valpolicella and the Veneto region, where sublime wines are born thanks to the persistent and expert techniques developed over time, blending tradition and innovation. The Amarone Classico is obtained through the appassimento technique, where grapes are left to dry during the early winter months. This method, which has become a hallmark of the winery due to significant studies conducted by their technicians, involves gently laying out the clusters in traditional fruit lofts on bamboo cane mats, ensuring better aeration among the grapes. This ancient technique allows the grapes to concentrate sugars and ideal compounds, evolving their aromatic characteristics. Once deemed ready, the grapes are pressed, and alcoholic fermentation begins slowly and gradually at the naturally low winter temperatures. The resulting wine is then aged for 24 months, mostly in Slavonian oak barrels, with the remainder in barriques.
