Description

The Amarone Classico from Valpolicella by Allegrini is one of the most beloved Italian wines worldwide. Amarone, in general, is produced with local grapes, vinified after a period of drying. The Amarone Classico Allegrini is the result of extensive research aimed at creating a complex and rich wine that also retains the fruity aromas of the initial grape, preserving the original fragrance of the fruit. During manual harvesting, the healthiest and ripest clusters of Corvina, Corvinone, Rondinella, and Oseleta grapes are selected. These grapes are then dried in special drying lofts until December. During this period, the grapes dehydrate, losing about 40% of their weight and concentrating sugars and aromas. In the first weeks of January, the grapes are pressed, and fermentation occurs in stainless steel tanks at a controlled temperature of 8-22°C, with a maceration period on the skins of about 25 days, accompanied by frequent pumping over. The wine then matures in new barrels for 18 months, and after blending, it further ages for another 7 months. It completes its refinement period with at least 14 months in the bottle.
