The Sauvignon wine is born from the vineyards of the Capriva Cru, the original core of the Schiopetto estate, which also manages vineyards in the prestigious areas of Zegla, Pradis, and Oleis.The splendid sun-exposed sites, protected from the cold northern winds by the Julian Alps and tempered by the gentle breezes from the nearby Adriatic Sea, have proven perfect for the slow maturation of grapes with rich and intense aromas.The soils of Eocene origin, characterized by the presence of Flysch or “ponca” in Friulian, derived from sedimentations of sandstones and limestones on ancient seabeds, are well-draining and rich in mineral substances. After manual harvesting, a gentle pressing is carried out with the decantation of the must in the absence of sulfur dioxide. Fermentation takes place in stainless steel tanks at a controlled temperature and lasts for about 10-12 days. The wine rests on the lees for approximately 8 months in steel and completes its aging with 5 months in the bottle.
