Grapes were gently pressed to barrel for fermentation and aged for seven months using 20% new French oak puncheons and 80% older French oak puncheons from coopers Damy and Ermitage. The lees were stirred only as needed during and after fermentation resulting in a lightly oak influenced and texturally nuanced wine. The Sauvignon Blanc emanates sweet floral orange blossom, white peach, and citrus peel aromatics. A wine of precision, purity and freshness with balanced acid structure, a light mineral character and a luscious lemon cream palate with hints of Bosc pear and Pink Lady apple average. Veraison and harvest were within a few days of our five-year average with no heat spikes during the growing season.
