The white Sauvignon “Piere” is the result of a gamble that Cantina Vie di Romans wanted to take on in the Friulian territory of Isonzo, highlighting its vocation for the cultivation of native and international grape varieties historically present in the region. The grapes come from the Piere vineyard located in the Isonzo Rive Alte area, in the municipal territory of Mariano del Friuli. The Sauvignon Blanc vines are about fifteen years old and were planted with Italian cluster-spaced clones. The vineyard covers an area of approximately 12 hectares and is situated at an altitude of 33 meters above sea level, with a north-south exposure and soils composed of clay rich in silicon, conglomerates, and abundant gravel. Harvesting takes place towards the end of August, and the best clusters undergo a cold maceration for a few hours. This is followed by fermentation at a low temperature with selected yeasts, which lasts for about twenty days. The wine matures in stainless steel tanks on its own yeast for nine months and completes its aging with ten months in the bottle.
