Bio Vio Giobatta, Aimone Vermentino 2019

Description

Bio Vio “Aimone” is a pure Vermentino, made from grapes that are hand-harvested in the vineyards of Bastia d’Albenga, in the Riviera Ligure di Ponente. This medieval estate is dotted with crenellated walls, castles, and ancient buildings where the vines have been planted and now have an average age of 60 years. The harvest takes place between mid-September and mid-October, depending on the vintage, followed by a 24-hour cold maceration. The grapes are then pressed and the alcoholic fermentation begins in stainless steel tanks. The wine is aged for 4 months in tanks, followed by an additional 2 months in the bottle.
