The vinification of Sauvignon grapes involves fermentation in stainless steel tanks (at 20-22°C), followed by maturation in the same fermentation containers on fine lees for 8 months with frequent bâtonnage and a brief bottle aging. Subsequently, there is a 10-month aging period in barrels.For this grape variety, climate and soil play a crucial role. The glacial plateau of San Lorenzo, with its deep gravel and the Bora winds that sweep through it from east to west, is ideal for enhancing the characteristics of this grape.This is a classic Sauvignon, intense and balanced, already enjoyable but also suitable for several years of further aging.
