The Barolo “Pajana” is a wine of personality, destined to further strengthen itself over time. Indeed, it stands out for its longevity, promising to offer emotions for the next 15-20 years, making it a smart investment. This Nebbiolo in purity represents the emblem of Domenico Clerico’s cellar, a significant name within the Langhe, showcasing their ability to highlight the characteristics of each parcel. The “Pajana” Barolo is made exclusively from Nebbiolo, a red grape variety from Piedmont renowned for producing exceptional red wines. The vines, over forty years old, are cultivated by Domenico Clerico’s team in the Ginestra cru, within a plot rich in limestone and clay. After harvesting, the grapes macerate for 20-30 days in stainless steel, undergoing spontaneous fermentation with indigenous yeasts. Subsequently, the wine matures in barrels, 80% of which are new, for a period of 24-30 months, before the bottling process begins.
