Description

Soberanu is the flagship red wine of the Cherchi winery, an IGT Isola dei Nuraghi Rosso made from overripe Cagnulari grapes produced by the oldest vines in the company’s vineyards. Soberanu comes from vineyards trained using the espalier system with Guyot pruning, situated at approximately 200 meters above sea level on hilly terrain characterized by good calcareous structure associated with clay fractions. This terroir is perfect for the production of Cagnulari grapes due to the calcareous nature of the soils, ideal for expressing finesse and minerality in wines, and the significant temperature variations in this area. For Soberanu, the oldest vine stocks are used, yielding between thirty and fifty quintals per hectare. The harvest occurs during the second decade of October when the grapes have higher sugar content. Hand-selected and transported in crates to the winemaking facilities, the grapes undergo destemming, and the must is left in contact with the skins for approximately ten to twelve days, simultaneously with alcoholic fermentation at a temperature of around 27°C using indigenous yeasts. Once fermentation is complete, the wine undergoes maturation in new and semi-new French oak barriques for fourteen months, during which malolactic fermentation also takes place.
