Description
The harvest of Procanico and Grechetto grapes for Santa Cristina Bianco began in the third decade of September. The vinification of the grapes took place separately, following the ripening times of each variety. After destemming and gentle pressing, the must was cooled to a temperature of 10°C to encourage natural clarification. Alcoholic fermentation occurred at a temperature not exceeding 17°C in stainless steel tanks, where the wine was stored at a temperature of 10°C until the moment of bottling.
