Chardonnay 85%, Grechetto 15%


Antinori produces “Cervaro della Sala” at the Castello della Sala estate by vinifying Chardonnay grapes and a small proportion of Grechetto grapes. These grapes come from clay-rich soil heavily interspersed with marine fossils on a limestone-based substrate. The vineyards cover 200 hectares to the north of Orvieto, with a northeast exposure, on slopes ranging from 470 to 220 meters in altitude. Vinification operations are carried out separately for the two grape varieties within the gravity-flow winery. The Chardonnay grapes undergo a controlled-temperature skin maceration at 10°C for 4 days, after which the must is racked by gravity into stainless steel settling tanks for a phase of static clarification. The alcoholic fermentation and malolactic fermentation of the Chardonnay take place in French oak barrels. After about 5 months of aging, the wine is transferred back to stainless steel, where it is blended with the Grechetto that has been processed solely in stainless steel tanks. After blending and a period of rest, the wine is bottled and undergoes a final bottle aging for approximately 10 months within the cellars.
