The red Brunello di Montalcino from Col d’Orcia is produced with grapes from vineyards cultivated in the hilly area of Sant’ Angelo, at an altitude of about 300 meters above sea level, with a sunny south-facing exposure. The vines were planted with a selection of estate clones, isolated for the quality of their grapes. Harvesting operations are carried out manually with careful selection of the best bunches, which are then further inspected in the cellar on the sorting table before starting vinification. Fermentation takes place in stainless steel tanks with controlled temperature and maceration on the skins for about three weeks to allow for complete and rich extraction. The wine matures for 4 years, at least 3 of which are in oak barrels from Allier and Slavonia with a capacity of 25, 50, and 75 hectoliters, finishing the aging period with at least 12 months in the bottle.
