Tortoniano is a Barolo originating from soils composed of gray tufaceous marls dating back 9 million years. These soils have a marine sedimentary origin, characterized by active limestone and basic pH. They exhibit a significant presence of magnesium and manganese. Towards the end of summer, the grape clusters are thinned out, constituting an initial selection activity for the grapes. Harvesting takes place in October, done manually. This is followed by a maceration with the skins for about 17-18 days, alcoholic and malolactic fermentation, both carried out in stainless steel containers. The aging phase lasts a minimum of 3 years, with 24 months spent in both large and medium-sized barrels. Before being released for sale, it further matures for some time in the bottle.
