Cloudy Bay Pinot Noir originates from a highly selective parcel selection among vineyards located in the southern areas of the Wairau Valley, including the Mustang and Barracks vineyards. The clay and loam subsoil forms a base under a gravelly surface layer, defining the soil in these areas. Harvest generally takes place between late March and early April. Grapes are carefully handpicked and selected. Once transported to the winery, most clusters are fully destemmed, while 13% of them undergo vinification still containing their green components. The alcoholic fermentation is initiated by indigenous yeasts naturally present on the skins, and maceration typically lasts around 18 days. Maturation occurs in French oak barrels, of which 35% are new, for approximately 12 months.
