The red wine Sammarco is born in the estate of Castello dei Rampolla, located south of Panzano in Chianti, in the province of Florence. The vineyards are cultivated in the splendid estate of Santa Lucia in Faulle, in the “Conca d’Oro” valley, with a sunny exposure to the southeast and southwest. Agricultural management has embraced the principles of biodynamics for over twenty years, with great attention to the balance of the vineyard ecosystem and the surrounding nature. The introduction of Cabernet Sauvignon dates back to the late ’70s, thanks to the intuition of the renowned winemaker Giacomo Tachis, who found in these lands an ideal habitat to cultivate not only Sangiovese but also Bordeaux varieties. Fermentations take place in cement vats using only indigenous yeasts. The wine then rests in untoasted French oak tonneaux or medium-toasted barrels of 12 hectoliters for about 18 months, concluding the long maturation process with 24-30 months in the bottle.
