Each bunch is hand-selected by expert eyes and hands, then benefits from exclusive “berry spa treatments”: a special soaking and hydro massage system consisting of three soaking vats and a drying tunnel. After a low-oxygen pressing, all the base wine musts ferment in temperature-controlled steel tanks and remain there until the following March. Seven months of refinement are then necessary for the wine to clarify, mature, and bring out the best of its vineyard character. The wines are expertly blended in the ‘magical rite’ of cuvée creation. Only after a minimum of 2 years on the lees, this Franciacorta can fully express its richness and identity. The disgorgement takes place in the absence of oxygen, using a unique system devised and patented by Ca’ del Bosco. This prevents oxidative shocks and additional sulfite additions. It makes our Franciacorta wines purer, more enjoyable, and longer-lasting. Finally, each packaged bottle is uniquely marked to ensure traceability.”
