The vineyard embodies a partnership with nature, a commitment to the work of the elders, and to family roots; it’s a respect for the raw material of grapes. For years, life flowed through the estate with the same regularity as the juice in the vats. Denis and Laurence moved forward together, freely, with the belief that it was always possible to do better, that the next vintage would be even better. In 2006, Denis suddenly passed away. It was enough to turn Laurence’s world upside down, but she persevered. This estate has been a family affair for generations, it’s the entire life of the Mortets, and it will remain so for the rest of their lives. Since the beginning, the company’s philosophy has been to fully respect the terroir and the vine plants. For this reason, there is no use of chemical fertilizers or herbicides, only organic amendments. Harvesting is done manually in small crates. After a rigorous selection of the grapes, a portion of the bunches is destemmed, and then alcoholic fermentation begins, exclusively with indigenous yeasts, involving pump-overs and punch-downs. The wine is aged for 18 months in oak barrels: 70% new barrels and 30% previously used ones.
