The vineyards are situated in the Barossa Valley, characterized by the presence of old vines, some of which reach up to a hundred years old, and low yields: ranging from 2 to 5 tons per hectare. The soil types present are quite diverse: red earth on red clay, sand and loam on clay, and sandy soils. Alcoholic fermentation takes place in stainless steel tanks at controlled temperatures. The aging process lasts for about 22 months in French, Hungarian, and American oak barrels, and partially in ‘octaves,’ American oak barrels aged for at least eight years in the winery’s cooperage, with a capacity of 90 liters.
