William Fevre, Montmains, Chablis Premier Cru 2018

Chardonnay 100%

This Premier Cru on the left bank of the Serein benefits from a very expressive terroir with a perfect but frost-exposed orientation. As everywhere in Chablis, the subsoil is composed of Kimmeridgian clay-limestone marls, rich in minerals and oyster fossils, which give the wines a very distinctive mineral character. The wine matures for about 14 months in total: for the first 6 months, 50% of it rests on fine lees in French oak barrels, while the rest is in steel. After blending the two portions, the aging process is completed in steel tanks. Full-bodied, dense, tense, and highly concentrated, this wine develops great aromatic purity and offers a beautiful persistence.
