The fermentation takes place in stainless steel tanks (at 20-22°C), and maturation occurs in the same fermentation containers on fine lees for 8 months with frequent bâtonnage. Subsequently, there is an aging period of 11 months in French oak barrels and 12 months in the bottle.The vineyards where this Chardonnay is born are located on a triangular plateau oriented east, with Gorizia at its apex and opening westward towards Gradisca and Cormons. The soils are gravelly, carried downstream by glacial meltwater. Attentive viticulture benefits from the significant temperature fluctuations provided by the cool winds coming from the Balkans, ensuring high-quality grapes. No chemical herbicides have been used here for the past four years.The “Jurosa” benefits from the proximity of the vineyards to the sea, which promotes a typically Mediterranean climate with diurnal temperature variations that support slow ripening, resulting in more robust and well-balanced grapes with richer aromas and flavors. Microclimatic characteristics like these allow for the creation of a wine with delicate and balanced aromas, rich in intense flavors typical of the Isontina region.
