The Cerbaiola Salvioni Brunello di Montalcino is a pure Sangiovese Grosso wine made from grapes originating from three different plots situated at an altitude ranging from 420 to 440 meters above sea level. The vines benefit from southeast exposure and galestro soil, along with a well-ventilated microclimate. Grape yields per hectare are kept very low, and once mature, the clusters are hand-harvested and transferred to the cellar. There, they are destemmed and placed in stainless steel tanks for spontaneous alcoholic fermentation, accompanied by about 4 weeks of contact between the must and the skins, without temperature control. After racking, the mass rests in stainless steel for a few months, undergoing malolactic fermentation, and is subsequently transferred to large Slavonian oak barrels of 18 and 22 hectoliters for aging for approximately 36 months. Finally, following an additional two years of bottle aging, the wine is ready for release to the market.
