Made famous by the illustrious Montrachet Grand Cru vineyard, Puligny has an ancient origin. Puligny may have belonged to a certain Pullius during the Roman empire. His estate was called ‘Pulliniacus,’ from which the name Puligny is derived (i.e., the property of Pullius, a fairly common name at the time). This wine comes from grapes and musts purchased from supply partners according to rigorous specifications. The grapes are hand-harvested and placed in open-work crates. If necessary, a careful sorting process is carried out. Slow pressing occurs in a pneumatic press, with the juice of the last press separated from the free-run juice. The juice is then transferred into wine barrels after a brief settling. Alcoholic fermentation, malolactic fermentation, and aging are processed in oak barrels, with approximately 20% of the barrels being new. The aging period lasts between 14 to 16 months.
