The wine Pignacolusse encapsulates the entire word “Pigna,” referring to the Pignolo grape variety and the resemblance of its bunch to a pine cone, and “Colusse,” the cadastral name of the vineyard. Vinified with 100% Pignolo grapes, Pignolo is, like Ribolla, Picolit, and others, an ancient indigenous Friulian grape variety, nearly extinct but currently revalued by some wineries. Jermann, in Friuli, places great emphasis on this variety as it believes it can express a strong personality with pronounced typical traits, a bold taste, very dry, and rich in tannins, although in less favorable vintages, it may appear rougher and more rugged. The winemaking process involves fermentation in wooden vats, manual punch-downs, and subsequent refinement in small new oak barrels for a period of 18 to 24 months, being marketed three years after the harvest.
