Description
William Fevre’s Chablis Premier Cru ‘Vaillons’ is born in one of the 8 lieu-dit of the Côte des Vaillons, characterized by clay-limestone marls and a southeast exposure. After gently pressing the best clusters, fermentation is carried out, followed by malolactic fermentation. The wine matures for about 14 months in total: for the first 6 months, 50% of it rests on fine lees in French oak barrels, while the rest is in steel. After blending the two portions, the aging process is completed in steel tanks. In the glass, it appears with a straw-yellow color. The bouquet expresses delicate floral aromas, flavors of white fleshed fruit, soft hints of small pastries, and iodine notes.
