The red wine “Il Carbonaione” from Poggio Scalette originates from the hill estate of Ruffoli, in the municipality of Greve in Chianti, a property of about 40 hectares, with approximately 15 devoted to vineyards and the rest dedicated to olive groves, cultivated fields, and woods. This area of Chianti Classico has historically been considered among the best, situated on a hilly strip between 350 and 550 meters above sea level, with loamy and sandy soils rich in skeleton. The vines are cultivated with spurred cordon and Guyot on steep terraced slopes with stone walls, and the plot called “Il Carbonaione” specifically hosts Sangiovese vines planted in the years following the end of the First World War. These plants are over 80 years old and represent a precious memory of the territory with an ancient clone known as Sangiovese di Lamole. Fermentation takes place in stainless steel tanks with a duration of about 12 days. The wine then matures for 14 months in 350-liter tonneaux and completes the aging period with at least 6 months in the bottle.
