The Jolivet family has been active in the wine world since 1926 when they started their business as a négociant. It wasn’t until 1987 and the arrival of Pascal Jolivet that the wines bearing his name were born. Pascal Jolivet immediately established himself as a dynamic and revolutionary figure by deciding to exclusively ferment his Sauvignon Blanc with indigenous yeasts to better express the typical varietal characteristics.The grapes that give life to Pascal Jolivet’s Sancerre Blanc Sauvage are selected from two hectares of old vineyards, planted on limestone soils, located in the municipalities of Champtin and Bué-en-Sancerre. The alcoholic fermentation takes place in temperature-controlled stainless steel tanks and occurs spontaneously with indigenous yeasts. The aging on fine lees also occurs in stainless steel tanks and lasts for twelve months. The wine is then bottled without filtration or cold stabilization.
