Planted in a terroir with vastly different soil characteristics, we must select a style that does not underestimate the overall, slightly rustic character typical of Pommard wines when they are young. Our choice is to craft an elegant wine using vineyards primarily located on hillsides (such as Chanlins, Refènes, Grands Poisots, Cras, En Moigelot, and La Croix Planet). The soil composition is primarily brown and limestone. Grapes from various plots are combined in the tanks. Upon arrival at our cellar, the grapes undergo meticulous sorting to retain only healthy grapes at optimal ripeness. We use 100% whole berries, and then the wine rests for 16 months, including 4 months in stainless steel tanks, and the remaining 100% in oak barrels, of which 33% are new oak.”
