The Sauvignon “Te Koko” from the Cloudy Bay estate perfectly embodies the character that the famous French grape variety expresses in New Zealand. The Marlborough region, located in the northeastern area of the South Island, has become the home of intense and elegant white wines within just a few decades. The “Te Koko” is a high-end Sauvignon from Cloudy Bay, confirming the level reached by this important New Zealand producer. The winery manages an estate of over 300 hectares in the hilly area adjacent to the sea in Marlborough and in the Central Otago region. The cuvée is the result of blending grapes from six different company plots located in the Marlborough area, characterized by sandy and gravelly soils, which are poor and very well-draining. To preserve the freshness of the grapes, the harvests take place during the night, and the clusters are softly pressed to extract only the free-run juice. Spontaneous fermentation with only indigenous yeasts occurs directly in French oak barrels, with a percentage of new wood of 8%. The wine matures in barrels for 12 months, partially undergoing malolactic fermentation and completes the aging process with a few months in the bottle.
