Description
Allegrini produces its Valpolicella Classico DOC starting with a typical blend of the region, where Corvina Veronese is combined with a substantial percentage of Rondinella and a 5% addition of Molinara. The vineyards, cultivated using both trellised and simple Guyot training systems, have an average age of around 33 years. They are located on hills characterized by a subsoil rich in clay and limestone. After harvesting, the grapes undergo fermentation in stainless steel tanks for 9 days at a temperature between 25 and 31 degrees Celsius. Following fermentation, the refinement phase occurs exclusively in stainless steel until mid-February.
